* 1/2 tsp salt
* 1/4 cup (30g) unsalted and chilled vegan butter (such as Earth Balance), cut into small cubes
* 1/4 cup (60g) dark brown sugar, packed
* 1/4 cup (60g) maple syrup
* 1 tbsp ground flaxseed + 3 tbsp water mixed together (to replace eggs)
* 1/2 cup (60g) cocoa powder
* 1/4 cup (50g) chopped walnuts or pecans (optional)
Instructions:
1. Preheat your oven to 350°F (180°C) and line an 8×8-inch (20x20cm) square baking pan with parchment paper. Set aside.
2. In a food processor, combine the mashed sweet potatoes, applesauce, coconut oil, and vanilla extract until smooth. Add the baking powder and salt and pulse a few times to incorporate.
3. Transfer the mixture to a mixing bowl and whisk in the flour, cocoa powder, sugar, and maple syrup until well combined. Fold in the unsweetened shredded coconut and chocolate chips (if using).
4. Pour the batter into the prepared baking pan and spread evenly. Sprinkle the chopped nuts over the top if desired.
5. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Allow the brownies to cool completely before cutting into squares.
