Instructions:
Step 1: Make the filling:
Preheat oven to 350°F (180°C). In a food processor, process the peanuts until smooth and creamy. Add the maple syrup, vanilla extract, and Celtic sea salt, and process until well combined. Place the mixture into a small bowl and set aside.
Step 2: Prepare the coating:
In another food processor, combine all the ingredients for the coating and pulse until you have a fine crumb texture. You may need to scrape down the sides of the bowl once or twice during this process. Set the coating aside.
Step 3: Form the peanut butter cups:
Using a tablespoon, scoop out a portion of the peanut butter filling and roll it between your palms to form a ball. Then, gently press each ball into the prepared coating mixture until fully covered. Use more coating if necessary.
Step 4: Bake and enjoy:
Place the peanut butter cups onto a parchment paper-lined baking sheet and bake for 10 minutes or until lightly browned. Allow them to cool completely before serving. Store any leftovers in an airtight container at room temperature for up to two weeks.
Note: If you prefer a softer consistency for the filling, you can increase the amount of maple syrup by adding another tablespoon. Alternatively, for a firmer filling, reduce the maple syrup by half a tablespoon.
