Ingredients:

For the Jollof Rice:

* 1 cup uncooked brown rice
* 2 cups water (or vegetable broth for non-fermented option)
* 1/2 teaspoon salt
* 1 tablespoon olive oil or avocado oil (optional)

For the Peanut Butter Sauce:

* 1/4 cup unsweetened natural peanut butter
* 1/4 cup water
* 1 tablespoon maple syrup or honey (optional)

Instructions:

1. Prepare the jollof rice according to package directions using brown rice, water, and salt. You can also use the method below. If you prefer a non-fermented version, replace the 2-cup water with vegetable broth.

Method:

* In a large pot, combine the 2 cups water, 1/2 teaspoon salt, and optional 1 tablespoon olive oil over medium heat. Bring to a boil.
* Stir in the brown rice and reduce the heat to low. Cover and simmer for about 20 minutes, until the liquid has been absorbed and the rice is tender. Fluff with a fork before serving.

2. While the rice cooks, prepare the peanut butter sauce. Combine the peanut butter, water, optional maple syrup or honey, and spices in a blender. Blend on high until smooth and creamy. Set aside.

3. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

4. Place the sliced plantain on the prepared baking sheet. Drizzle with the maple syrup or honey and toss gently to coat each slice. Sprinkle with a pinch of salt.

5. Roast in the preheated oven for about 15-20 minutes, turning once halfway through, until the plantain is golden brown and caramelized. Remove from the oven and set aside.

6. When everything is ready, assemble the bowls. Divide the cooked brown rice among four small bowls. Top each portion of rice with 2 tablespoons of the peanut butter sauce.

7. Arrange the roasted plantain slices around the rice mixture like petals. Sprinkle with the reserved chopped cilantro and roasted peanuts. Serve immediately. Enjoy!
