Ingredients:

For the vegetable broth base:

• 2 medium carrots, peeled and roughly chopped
• 2 stalks celery, sliced
• 1 large onion, quartered

For the fermented mixture:

• 1 small cucumber, peeled and thinly sliced (about 1/4 cup)

• 1 red bell pepper, seeded and thinly sliced
• 1 green bell pepper, seeded and thinly sliced
• 1 jalapeño pepper, seeded and minced (optional)
• 1/4 cup water
• 1 tablespoon apple cider vinegar
• 1 teaspoon salt

Instructions:

1. In a blender or food processor, combine the carrots, celery, and onion with enough water to cover the bottom of the blender pitcher. Blend until smooth.
2. Pour the vegetable broth base into a large pitcher or jar. Add the fermented mixture, along with ice cubes if desired. Stir gently to combine.
3. Taste and adjust seasoning as needed. You may need more or less fermented mixture, depending on your personal taste preferences.

Note: The longer you let this drink sit, the more the flavors will meld together and intensify. So feel free to prepare it ahead of time and refrigerate it for up to 2 hours before serving.
