1 teaspoon of Dijon mustard

2. Roughly grate the cauliflower using the shredding disc on a box grater or a food processor fitted with a shredding blade. Transfer the grated cauliflower to a clean kitchen towel and squeeze out any excess moisture. This will help prevent the burgers from becoming soggy.

3. Place the cooked chickpeas, almond flour, oats, cumin, coriander, smoked paprika, salt, black pepper, garlic, onion, and parsley in a large bowl. Add the drained cauliflower and mix well until everything is evenly combined.

4. Divide the mixture into six equal portions and shape each portion into a patty about 1/2-inch thick. You should have six patties total.

5. Place the burgers on the prepared baking sheet and brush both sides lightly with olive oil. Bake for 20 minutes, flipping halfway through.

6. While the burgers are cooking, prepare the sauce. Combine all the ingredients for the sauce in a small bowl and whisk until smooth. Set aside.
