Directions
Start by cooking teff for a creamy base, then blend it with classic Ethiopian flavors—ginger, sacred basil, and fresh cucumber—plus dates for sweetness and lemon for brightness. Enjoy this cooling, nutrient-packed vegan smoothie as a snack or breakfast. Tena Adam (Ethiopian sacred basil) has a unique peppery, herbal flavor. If unavailable, substitute Thai basil or a mix of regular basil and a few fresh oregano leaves. Teff adds protein, fiber, and a malty note. For a raw version, soak teff overnight instead of simmering.

Rinse the teff grains thoroughly and place in a small saucepan with 1 cup cold water. Bring to a boil, then simmer for 6-8 minutes until just tender but not mushy. Drain and cool (can be done ahead). |
