1 avocado, cubed
1 lime, juice only
1 large tortilla (whole wheat or corn) per serving
Instructions:
1. Prepare the marinade by combining the ground beef, salt, pepper, coconut oil, garlic powder, chili powder, cumin, and salsa in a bowl. Let the mixture sit for at least 30 minutes or overnight before using.
2. While the meat is marinating, prepare the rest of the ingredients. Chop all the veggies finely and cube the avocado. Squeeze the lime juice into a small bowl.
3. When ready to cook, preheat the oven to 400°F.
4. Grill or pan-fry the tortillas until slightly crisp. Set aside to cool completely before filling.
5. To assemble the tacos, heat up a skillet or griddle over medium heat and sauté the beef until browned on both sides. Remove from the heat and set aside.
6. Add a dash of oil to the same skillet or griddle and sauté the vegetables together until softened. Add the avocado and season with salt and pepper if desired.
7. Assemble the tacos by placing one tortilla on each plate, adding the beef and vegetable mix, and drizzling the remaining salsa on top. Garnish with the lime juice and enjoy!
