Ingredients List:
– 2 Tablespoons Olive oil
– 1 Onion, chopped
– 2 Bell Peppers, chopped (use your favorite colors)
– 2 Carrots, chopped
– 1 Celery Stalk, chopped
– 1 Teaspoon Ground Ginger
– ½ Teaspoon Cumin Seeds
– ¼ Teaspoon Salt
– ⅛ Teaspoon Pepper
– 1 Cup Water
– 2 Cups Uncooked Brown Rice
Instructions:
1. Heat up olive oil in a large pot on medium heat. Add onions and saute until tender, about 5 minutes.
2. Then add bell peppers, carrots, celery, ginger, cumin seeds, salt, and pepper. Saute for another 5 minutes.
3. Next, pour water into the pot and stir in the brown rice. Bring the mixture to a boil over high heat. Cover and reduce heat to low; simmer for 15-20 minutes, or until rice is cooked through.
4. Once done, remove the lid and continue to cook, stirring occasionally, until all liquid has been absorbed, about 10 more minutes.
5. Remove from heat and serve immediately.
Note: This stew can be made gluten-free simply by substituting brown rice with quinoa.
