Ingredients
– 4 medium-sized Yukon gold potatoes (about 1 pound)
– 1 teaspoon sea salt or more to taste
– 1 tablespoon olive oil
– 1/4 cup cornstarch
– 1/4 cup water
– 1/4 cup unsweetened almond milk
– 1/4 cup gluten-free all-purpose flour
– 1/4 cup cornmeal
– 1/4 cup rice flour
– 1/4 cup arrowroot powder
– 1/4 cup tapioca starch
– 1/4 cup coconut sugar (optional)
– 1/4 cup nutritional yeast (optional)
– 1/4 cup vegan butter or Earth Balance (optional)
Instructions
1. Preheat your air fryer to 375°F or 190°C. If you don’t have an air fryer, you can use a large skillet with a lid instead.
2. Wash and scrub the potatoes thoroughly. Cut them into thin strips about 1/8 inch thick. Place the potato strips in a large bowl of cold water while you prepare the rest of the ingredients. This will help keep the potatoes from turning brown.
3. In a small bowl, whisk together the sea salt, olive oil, cornstarch, water, and arrowroot powder until well combined. Set aside.
4. Drain the potato strips and transfer them to a clean towel to remove excess moisture. Toss the drained potatoes with the melted vegan butter or Earth Balance, if using.
5. Add the potatoes to the bowl with the seasoned cornstarch mixture and toss until they are evenly coated.
6. Spread the potato shoestrings out on a parchment-lined baking sheet or air fryer basket in a single layer. Make sure they are not overlapping.
7. Cook the potato shoestrings for 10 minutes in the air fryer or stir-fry them in the skillet without a lid for 5 minutes. Flip them halfway through cooking.
8. After 10 minutes, check the potatoes for crispiness. They should be golden brown and crispy on the outside but still slightly tender on the inside. If they need more time, continue cooking for another 2-3 minutes.
9. Remove the potato shoestrings from the heat and place them on a paper towel-lined plate to drain any excess oil. Season with additional sea salt and pepper, if desired.
10. Serve the crispy vegan potato shoestrings as a garnish for salads, sandwiches, soups, or enjoy them on their own!
