Ingredients:
For the limeade base:
* 2 limes, juiced (about 1 cup)
* 1/2 teaspoon grated lime zest
* 1 1/2 cups water
* 1/4 cup granulated sugar or honey (optional)
* Ice cubes (for serving)
For the mint syrup:
* 1/2 cup chopped fresh mint leaves
* 1/4 cup filtered water
* 2 tablespoons raw organic cane sugar
Instructions:
1. Combine all the ingredients for the limeade base in a large pitcher and stir well.
2. Add ice cubes to chilled glasses and pour the prepared limeade over them.
3. To make the mint syrup, place the chopped mint leaves, filtered water, and raw cane sugar in a small saucepan over medium heat. Simmer gently for about 5 minutes or until the sugar has dissolved. Allow the mixture to cool completely before straining it through a fine mesh sieve into another bowl or container.
4. Pour the cooled mint syrup into a blender along with the remaining ingredients (lime juice, sparkling water, and optional agave nectar). Blend until smooth and frothy.
5. Divide the vegan whipped cream among four glasses and top each one with the Caribbean Limeade mixture. Garnish with additional fresh mint leaves and serve immediately.
Note: You may adjust the sweetness levels by adding more or less agave nectar to taste.
