* 1 cup cooked long-grain brown rice (optional but recommended)

* 1/2 small green bell pepper, finely chopped

* 1 tsp smoked paprika
* 1 tsp chili powder
* 1 tsp ground cumin
* 1 tsp salt
* 1 Tbsp freshly squeezed lime juice
* 1/4 cup unsweetened applesauce
* 1/4 cup rolled oats (optional)
* 2 Tbsp mashed avocado (optional)
* 1/4 cup chopped fresh cilantro
* 1/4 cup crushed tortilla chips (for serving)
Instructions:
1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
2. In a large bowl, mash together the black beans, cooked brown rice, sweet potato, red bell pepper, green bell pepper, garlic, smoked paprika, chili powder, cumin, and salt until mostly smooth. Stir in the lime juice, unsweetened applesauce, and optional oats. Mix well.
3. Add the optional mashed avocado and chopped cilantro to the mixture. Stir gently to combine.
4. Divide the mixture into 4 equal portions and shape each portion into a patty about 1/2 inch thick. Place the patties on the prepared baking sheet.
5. Bake for 15 minutes. Flip the patties over and continue baking for another 10-15 minutes, or until golden brown on both sides.
6. While the burgers are cooking, prepare your desired toppings such as ketchup, mustard, lettuce, tomatoes, pickles, onion, etc.
7. To assemble the burgers, place a burger on each bun and top with your choice of condiments and toppings. Serve immediately.
Note: For a crunchier texture, you can lightly coat the uncooked patties with cornstarch before placing them on the baking sheet.
