For the sauce:
* 1 ripe avocado, mashed
* juice of 1 lime
* 1/4 teaspoon salt
Instructions:
1. Preheat your grill or panini press to medium heat. If using a stovetop, lightly coat the bottom of a large nonstick skillet with cooking spray.
2. Place the cooked sweet potato, onion, and garlic into a food processor and pulse until smooth. Transfer the mixture to a bowl and stir in the cooked black beans, olive oil, cumin, chili powder, if using, and salt and pepper. Mix well to combine.
3. Divide the sweet potato and black bean mixture into four equal parts and shape each portion into a patty. Gently squeeze each patty to remove excess moisture.
4. Add the breadcrumbs and shredded coconut to a shallow dish and mix together. Coat each burger patty evenly with the crumb mixture, pressing gently so that it adheres.
5. Heat your grill or panini press to medium-high heat. Brush the tops of the buns with olive oil and place them cut-side down on the hot surface. Grill for about 3 minutes or until golden brown and slightly toasted. Carefully flip the buns over and continue toasting for another minute. Remove from heat and set aside.
6. Spread a generous amount of mashed avocado onto the bottom halves of the toasted buns. Drizzle with fresh lime juice and sprinkle with sea salt.
7. Place one of the seasoned veggie patties on top of the avocado and spread a thin layer of barbecue sauce on the other side of the bun. Top with lettuce, tomato, pickles, and any additional condiments you enjoy.
8. Place the top bun on the burger and serve immediately. Enjoy!
Note: You can also cook these burgers in a nonstick skillet on the stove or in the air fryer. Just adjust the cooking time as needed.
