Ingredients:
For the syrup:
1/4 cup water
1 tablespoon raw apple cider vinegar
1 teaspoon agave nectar (or honey)
1/2 teaspoon sea salt
Freshly squeezze juice from half a lime
Instructions:
For the drink:
4 cups filtered water
Handful of fresh mint leaves, chopped
Peel and seeds removed from one large cucumber, diced
Juice from 1 lime
Sweetener of choice (agave, maple syrup, honey, etc.) to taste
Ice cubes (optional)
Directions:
1. Combine all the ingredients for the syrup in a small bowl or jar. Stir well and let sit at room temperature for about 1 hour to allow the flavors to infuse. Strain the mixture through a fine mesh strainer into a glass bottle or container. Store the extra syrup in the refrigerator for up to two weeks.
2. Fill a pitcher with 4 cups (about 1 liter) of cold filtered water. Add the chopped mint leaves and let infuse for 5 minutes.
3. Remove the mint leaves from the pitcher using a fine-mesh sieve. Discard the leaves.
4. Add the diced cucumber to the pitcher along with the strained syrup, lime juice, and sweetener of your choice. Taste and adjust the sweetness as desired.
5. Pour the contents of the pitcher over ice cubes in individual serving glasses. Garnish with additional mint leaves, if desired.
Note: You can also blend the entire contents of the pitcher together for a smoother consistency.
