Ingredients:
For the Chili-Lime Dressing:
– 1/4 cup fresh lime juice
– 1/4 cup water
– 1 tbsp olive oil
– 2 cloves garlic, minced
– 1 jalapeño pepper, seeded and finely chopped
– 1 tsp ground cumin
– 1 tsp smoked paprika
– 1/2 tsp sea salt
– 1/4 tsp black pepper
For the Cauliflower Rice:
– 1 head cauliflower, cut into florets
– 1 tbsp avocado oil or ghee
– 1 onion, thinly sliced
– 2 cloves garlic, minced
– 1 tsp sea salt
For the Veggie Mix:
– 1 can black beans, drained and rinsed
– 1 bell pepper, cored and diced
– 1/2 cup frozen corn kernels
– 1/2 cup cherry tomatoes, halved
Optional Toppings:
– shredded cheese (such as Colby Jack or Monterey Jack)
– sour cream
– guacamole
– pickled jalapeños
– cilantro leaves

Note: If you don’t have a food processor, you can use a box grater to grate the cauliflower instead. Just pulse until it resembles rice, and then transfer to a clean tea towel or paper towels to absorb excess moisture.
