For the sauce:
* 1/4 cup of plain full-fat yogurt (preferably Greek)
* 1 tablespoon of lemon juice

* 1/2 teaspoon of honey
* Salt and pepper to taste
Instructions:
1. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
2. Roughly grate the cauliflower using the shredding disc on a box grater or a food processor fitted with a shredding blade. Transfer the grated cauliflower to a clean kitchen towel and squeeze out any excess moisture. This will help prevent the burgers from becoming soggy.
3. Place the cooked chickpeas, almond flour, oats, cumin, coriander, smoked paprika, salt, black pepper, garlic, onion, and parsley in a large bowl. Add the drained cauliflower and mix well until everything is evenly combined.
4. Divide the mixture into six equal portions and shape each portion into a patty about 1/2-inch thick. You should have six patties total.
5. Place the burgers on the prepared baking sheet and brush both sides lightly with olive oil. Bake for 20 minutes, flipping halfway through.
6. While the burgers are cooking, prepare the sauce. Combine all the ingredients for the sauce in a small bowl and whisk until smooth. Set aside.
7. After 20 minutes, remove the burgers from the oven and transfer them to a serving platter. Top each burger generously with the Moroccan-style sauce and serve immediately.
Serving size: Makes 6 servings (approximately 4 ounces each). Serving size is 1/4 of a recipe.
