Directions

For the Popsicles:
• 3 ripe mangos, peeled and chopped
• 2 large very ripe avocados, flesh only
• 1/4 cup unsweetened coconut flakes
• 1 tablespoon raw turmeric powder
• Juice of 2 limes
• 1 teaspoon agave nectar
For the Coating:
• 1/4 cup shredded coconut
• 1 teaspoon arrowroot powder
Instructions:
1. In a high-powered blender, combine the mangos, avocados, coconut flakes, turmeric powder, lime juice, and agave nectar. Blend until smooth and creamy.
2. Pour the mixture into popsicle molds, leaving about half an inch at the top. If you don’t have popsicle molds, you can use small paper cups or plastic bottles.
3. Place the filled molds in the freezer for at least 4 hours, or until solidified.
4. Meanwhile, prepare the coating by mixing together the shredded coconut and arrowroot powder in a small bowl.
4. Once the popsicles are frozen, remove them from the molds by gently running hot water over the bottom of the mold to loosen the popsicles.
5. Roll each popsicle in the prepared coating, covering completely. Return to the freezer for another 30 minutes to set the coating.
Directions:
To serve, simply unmold your delicious creations and enjoy! You can store any leftover popsicles in an airtight container in the freezer for up to 2 weeks.
