Ingredients (makes about 6-8 popsicles):
* 4 ripe medium-sized mangoes, flesh only, roughly chopped
* 1/2 cup frozen unsweetened coconut flakes
* 2 large Hass avocados, peeled, pitted, and flesh scooped out
* 1/2 cup unsweetened almond milk
* 1 tbsp freshly squeezed lime juice
* 1/2 cup passion fruit pulp (about 2-3 large passion fruits)
* 1/4 tsp vanilla extract
* 1/2 cup ice cubes
Instructions:
1. In a blender, combine the mango, coconut, avocado, almond milk, lime juice, and vanilla. Blend until smooth and creamy.
2. Pour the mixture into a bowl and stir in the remaining 1/2 cup of crushed ice. This will help to thin out the mixture slightly.
3. Pour the contents of the bowl into popsicle molds and insert sticks.
4. Place the molds in the freezer for at least 4 hours or overnight. Once solidified, remove from the molds carefully using a wet paper towel if necessary.
