* 1/2 cup unsweetened shredded coconut flakes
* 1/2 cup unsweetened rolled oats
* 1/2 cup cornstarch
* 1 teaspoon ground ginger
* 1/2 teaspoon ground turmeric
* Pinch of red pepper flakes
* 1 tablespoon maple syrup
* 1/2 teaspoon vanilla extract
For the mango sticky rice filling:
* 2 ripe mangos, peeled, pitted, and diced into bite-sized pieces
* 1/4 cup unsweetened coconut milk beverage
* 1/4 cup filtered water
* 1 tablespoon arrowroot powder
* 1 tablespoon tapioca flour
* 1 tablespoon granulated sugar
* Pinch of salt
* Freshly grated zest from half a lime
* Juice of 1 lime
Instructions:
1. In a large mixing bowl, combine the Rice Krispies treat base ingredients (rice crisp cereal, coconut flakes, oats, cornstarch, ginger, turmeric, red pepper flakes, maple syrup, and vanilla). Mix well to combine.
2. Add the melted coconut oil and mix until everything is fully combined and starting to stick together. Set aside.
3. Prepare the mango sticky rice filling ingredients. In a blender or food processor, combine the mango, coconut milk, water, arrowroot powder, tapioca flour, granulated sugar, salt, freshly grated lime zest, and juice. Blend on high speed until smooth.
4. Divide the Rice Krispies mixture into two even portions. Press one portion into the bottom of a 9×5-inch loaf pan or similar container.
5. Pour the prepared mango sticky rice filling over the Rice Krispies layer. Spoon the remaining Rice Krispies mixture over the top of the filling, pressing down gently to secure.
6. Cover the dish with plastic wrap and refrigerate for at least 30 minutes or up to 2 hours. This will allow the Rice Krispies mixture to soften and set around the edges.
7. Once chilled, use a sharp knife to cut the treats into desired shapes. Serve cold and enjoy!
