• 2 cups unsweetened almond milk (or any non-dairy milk)
• ½ cup chia seeds
• ¼ cup maple syrup (or honey, agave nectar, or coconut sugar)
• Pinch of salt
Moroccan Spice Mix (for serving):
• 2 tablespoons ground cinnamon
• 1 tablespoon ground ginger
• 1 teaspoon ground turmeric
• 1/2 teaspoon ground cardamom pods (optional)
Pomegranate Arils (for serving):
• 1 small or 1/2 large pomegranate
Instructions:
1. In a medium bowl, whisk together the almond milk, chia seeds, maple syrup, and pinch of salt until well combined. Set aside for a few minutes.
2. Meanwhile, prepare the Moroccan spice mix by combining all the ingredients in a small bowl.
3. Add the prepared chia mixture to individual serving glasses or jars. Divide the Moroccan spice mix evenly among the glasses or jars.
4. Cover each jar or glass with plastic wrap and refrigerate overnight. The longer you allow the chia seeds to soak, the thicker they become.
5. To serve, top each chilled pudding with about 1 tablespoon of chopped fresh fruit (such as berries, mango, papaya, kiwi), a sprinkling of nuts, and plenty of pomegranate arils. Enjoy immediately!
Note: If you prefer a less thick consistency, feel free to use more liquid in the recipe. You can also adjust the sweetness according to your preference.
