Ingredients:
For the Avocado Toast:
* 1 ripe medium avocado, halved and pitted
* 1/4 cup cooked chickpeas, drained and rinsed
* 1 tablespoon chopped red onion (optional)
* Juice of 1/2 lemon
* Pinch of sea salt and black pepper
For the Lemon Dressing:
* 1 clove garlic, minced
* 1 teaspoon fresh ginger, grated
* 1 tablespoon extra virgin olive oil
* 2 tablespoons filtered water
* Freshly squeezed juice of 1/2 lemon
* Pinch of sea salt and black pepper
Directions:
1. For the avocado toast, smear each half of the toasted bread with a little bit of lemon dressing.
2. Top one slice with the mashed avocado, chickpea mixture, red onion if using, and drizzle with more dressing.
3. Sprinkle with salt, pepper, and paprika for added flavor.
Optional:
* Add a fried egg or tempeh bacon for additional protein
