1 block (14 oz or 400g) firm tofu, pressed and cubed

2 cups broccoli florets

1 red bell pepper, thinly sliced

2 green onions, sliced diagonally

1 Sesame seeds for garnish

1 Sliced nori sheets for garnish (optional)
Directions
Adjust the level of spiciness by adding chili flakes or sriracha sauce to the teriyaki sauce if desired. This recipe is versatile, and you can customize it with your favorite vegetables.

Cook the soba noodles according to the package instructions, usually for about 4-5 minutes in boiling water. Drain and set aside. |

In a small bowl, whisk together all the teriyaki sauce ingredients, including soy sauce, maple syrup, rice vinegar, mirin, minced garlic, and minced ginger. |

In a large non-stick skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the cubed tofu and cook until it turns golden brown on all sides, about 5-7 minutes. Pour half of the teriyaki sauce over the tofu and stir well. Cook for an additional 2-3 minutes until the sauce thickens and coats the tofu. Remove the tofu from the skillet and set it aside. |

In the same skillet, add another tablespoon of sesame oil. Stir in the broccoli florets and red bell pepper slices. Sauté for about 5 minutes until they become tender but still crisp. |
