Instructions:
1. In a small bowl, whisk together the almond milk, chia seeds, mashed banana, shredded coconut, chopped date, cacao powder, maple syrup, and vanilla extract until well combined.
2. Cover and refrigerate for at least 1 hour or up to overnight. The mixture will thicken as the chia seeds absorb the liquid.
3. Once ready, layer the prepared chia seed mixture with your choice of fruit and toppings in glasses or jars. You can also serve them in clear bowls for easy assembly.
4. Garnish with additional nuts, berries, and/or other desired toppings. Enjoy immediately!
Note: If you would like a more traditional African twist on this recipe, feel free to use amasi (fermented cow’s milk) or moringa powder instead of the coconut milk and cacao powder.
