Ingredients (serves 2):
For the Açaí Bowl:
1 large frozen acai puree packet (about 8 oz)
1/2 cup unsweetened coconut flakes
1 ripe banana, sliced
1 small handful of blueberries
1 tablespoon of chopped walnuts
For the Topping:
1/2 cup unsweetened shredded coconut
1/2 cup fresh pineapple chunks
1/2 cup diced mango
1 avocado, cubed
Directions:
1. Place all the ingredients for the acai bowl into a blender and puree until smooth.
2. Pour the mixture evenly into two bowls.
3. Top each serving with the prepared toppings: unsweetened shredded coconut, fresh pineapple chunks, diced mango, and cubed avocado.
